50g Dried Whole Apricots
200g Self Raising Flour
140g Unsalted Butter
60g Caster Sugar
1 Medium Egg
1. Preheat 180 ºC/350ºF/Gas Mark 4. |
2. Grease and line a baking tray. |
3. Wash and dry the apricots. |
4. Chop into small pieces. |
5. Sift flour into a mixing bowl. |
6. Rub butter into flour until the mixture resembles breadcrumbs. |
7. Add sugar and apricots. |
8. Whisk eggs and add this to the mixture. |
9. Mix together until it forms a smooth, thick paste. |
10. Spoon the mixture into the prepared tin. |
11. Smooth the top then bake in the preheated oven for about 25-30 minutes. |
12. Cut into squares while still warm. |
13. Serve. |
